#foodie friday: 'what you taco'n bout? it's a pizza!'

Dear #foodie's, 
It's round two of the #foodie Friday, and yes, I've done it again, simple yet delicious (allegedly), and to be honest, it's a fusion of two of my top five favourite eat's - taco's & pizza. Simply put, it's a taco-pizza. Genius, and completely unoriginal.  
So if you find yourself indecisive of what you feel like tonight, you could be craving Mexican, or, you could be craving a top-heavy Pizza, then don't deprive yourself, treat yo' self to a Taco Pizza. 
So, if you follow my lead, and you successfully make a Taco Pizza for you and your friends, and upon delivery they say "what the heck is this?", you can simply reply ...
"what you taco'n bout? it's a pizza!"
Enjoy!
  • 500g of Mince
  • 400g Tin of Corn
  • Packet of Taco Wrap's (Size dependent on hunger levels)
  • 1 x Jar of preferred Taco Sauce (I'm more of a mild gal)
  • Grated Parmesan for topping
  • 400g Tin of Black Beans, Drained. 
  • 1 Bunch of Spring Onion
  • 1 Punnet of Cherry Tomatoes, Halved.
  • 1 Red Onion.
  • 2 Avocado's 
  • Salt & Pepper
  • 250 g Tub of Sour Cream 

Prep Time: 15 Mins     Cook Time; 5 Mins    Serves: 6

Preheat an oven to Grill.

Drain & Rinse Tin of Corn. Drizzling Oil, and adding a sprinkle of Salt and Pepper to the fry pan, lightly fry the corn until slightly browned. Once browned, remove from Fry Pan into a separate bowl & keep in the warming tray.

Add Mince to the Frypan and cook until browned. Leave heat on low. Add the tin of Black Bean's that have been drained, and leave until both the Mince and the Black Bean's are completely cooked through. Simmer. 

In the mean time, prep the remaining condiment's you will use for your Taco Pizza's, and place these in little fun bowl's to compliment your no-doubt already amazing Mexican themed fiesta. 

Once all condiment's are prepared, grab your Taco Wrap, and add this to a Baking Tray that is covered in Aluminium Foil which you can then place your very first Taco Wrap onto. Using the Taco Sauce of your choosing for the base, smear it around until you get a covering to your satisfaction. Once that is smeared, add your Mince & Black Bean topping, followed by Spring Onion, Red Onion, Corn, Parmesan Cheese & Cherry Tomatoes. 

Place the tray under the Grill for 5 minute's, or until the Taco Pizza is cooked to satisfaction. 

Removed the Taco Pizza, and then finish by garnishing with Avocado slice's and Sour Cream. 

 

 


Well, let me know what you think my fellow #food-ian's. This was a completely made-up-as-you- go recipe (as you can tell by the cooking direction's, so logical right?). But it was a hit with my team, so I hope you satisfy the hungry belly's you choose to feed.
